duro e acqua e che viene lavorata a mano. Assomiglia ad un piatto della zona mediterranea, il <em>cous cous<\/em>, che per\u00f2 \u00e8 formato da sfere irregolari e pi\u00f9 piccole di diametro. Proprio per questa somiglianza, la fregula viene chiamata anche\u00a0<strong><em>cous cous<\/em> sardo<\/strong>.<\/p>\n<p>Prepararla \u00e8 un rito della tradizione sarda in cui viene impastata la semola con un movimento circolare delle mani e utilizzando acqua tiepida e salata. Con lo \u201csfregamento\u201d \u2013 si ottengono le caratteristiche \u201cpalline\u201d di fregula.\u00a0Appena impastata viene lasciata asciugare su un telo prima di essere tostata in forno per una quindicina di minuti: questo processo garantisce l\u2019assunzione del caratteristico colore dorato e un sapore davvero unico e particolare.<\/p>\n<\/div><\/div><\/div><\/div><\/div><div l&#8217;acqua di cottura<\/li>\n<li>far bollire 6 gamberi in acqua salata per 10 min e mettere da parte per la decorazione<\/li>\n<li>mettere in una padella 5 cucchiai di olio e far dorare la cipolla tritata con il peperoncino e due spicchi d\u2019aglio<\/li>\n<li>aggiungere i pomodori secchi tritati finemente, i calamari tagliati ad anelli di circa mezzo centimetro e i rimanenti gamberi<\/li>\n<li>far rosolare il tutto per 5 minuti<\/li>\n<li>aggiungere la fregula e \u00a0insaporire per 5 minuti con tutti gli ingredienti, bagnando sino a cottura con il brodo di pesce<\/li>\n<li>a circa met\u00e0 cottura aggiungere i rimanenti gamberi, le vongole e l\u2019acqua di cottura delle vongole<\/li>\n<li>circa 5 minuti dalla fine cottura togliere dal fuoco e lasciar riposare con il coperchio per 10 minuti<\/li>\n<li>guarnire con i gamberi, prezzemolo tritato e scorza di limone
