piatto della tradizione rivisitato con ingredienti unici.<\/p>\n<p>Mai sentito parlare dell&#8217;<strong>Umeboshi<\/strong>? Si tratta di un popolare condimento di origine giapponese ricavato dalla fermentazione delle\u00a0prugne, un alimento probiotico ricco di betacarotene.\u00a0L&#8217;Umeboshi ha un gusto particolarmente acido e salato, dovuto principalmente alla macerazione nel sale. Di solito \u00e8 di colore bruno aranciato ma spesso viene colorato con le foglie di shiso, una pianta aromatica simile al basilico ricca di antociani, per tingerlo di rosso acceso.<\/p>\n<p>L&#8217;<strong>Agar agar<\/strong> invece \u00e8\u00a0un polisaccaride usato come gelificante naturale, un estratto di alghe rosse. La\u00a0gelatina prodotta ha un sapore delicato ed \u00e8 ricca di sali minerali, oltre ad essere completamente vegetale e naturale.<\/p>\n<p>Questi due ingredienti si uniscono alla Spirulina italiana la gelatina di cappuccio viola:<\/p>\n<ul>\n<li>estratto di 1\/4 di cappuccio viola<\/li>\n<li>3 g di agar agar<\/li>\n<li>1 cucchiaino da t\u00e8 di acidulato di Umeboshi<\/li>\n<li>500 ml di acqua<\/li>\n<\/ul>\n<\/div><\/div><\/div><div class=\"fusion-layout-column fusion_builder_column fusion-builder-column-5 fusion_builder_column_1_2 1_2 fusion-flex-column\" buccia<\/li>\n<li>cuocere in forno a vapore per 50 minuti oppure in microonde per circa 8 minuti alla potenza di 750 W<\/li>\n<li>una volta cotte lasciare intiepidire le patate<\/li>\n<li>lavorare a caldo le patate e una volta schiacciate, aspettare che si intiepidiscano<\/li>\n<li>aggiungere la farina e la <strong>Spirulina italiana in spaghettini<\/strong> reidratata<\/li>\n<li>aggiungere all&#8217;impasto 90 g di farina e compattare tutti gli ingredienti evitando che si inumidisca troppo<\/li>\n<li>formare gli gnocchi e per evitare che si attacchino in pentola, aggiungere un goccio d&#8217;olio all&#8217;acqua di cottura<\/li>\n<\/ul>\n<p>Per la gelatina di cappuccio viola:<\/p>\n<ul>\n<li>con l\u2019aiuto di un estrattore ricavare il succo del cappuccio<\/li>\n<li>aggiungere l\u2019acidulato di umeboshi<\/li>\n<li>aggiungere acqua per arrivare ad un volume totale di mezzo litro<\/li>\n<li>mettere sul fuoco a scaldare senza raggiungere il punto di bollore<\/li>\n<li>unire l\u2019agar agar ed agitare il tutto con una frusta per almeno 5 minuti, sempre sotto la soglia di bollore<\/li>\n<li>versare in uno stampo di silicone a cubetti<\/li>\n<li>lasciare raffreddare prima a temperatura ambiente e poi in frigorifero<\/li>\n<\/ul>\n<\/div>\n<div
